Before we begin, let's take some time to appreciate why matcha is so good for you. It's also packed with antioxidants and feel-good ingredients that can give you that boost you're looking for each day. Some studies have shown that drinking matcha can also improve focus, alertness and your ability to self-motivate.

Matcha will also provide you with all of that caffeine your body is craving, but as a slow release, meaning it won't keep you up a night and certainly won't have you feeling sluggish and down. Bye bye caffeine crash.

Be Careful Which Matcha You Use 

We, of course, use the Jomeis Fine Foods powdered latte mix for this recipe. However, you can use whichever matcha you would like. Though, we must warn. While this dessert is sugar-free, it is sweetened by our naturally delectable range. Other matcha latte alternatives on the market may either be incredibly bitter (and not suited for a sugar-free cupcake) or may add a lot of sugar to hide that naturally sharp and startling matcha taste. 

We recommend always reading the label to learn about the other ingredients in your matcha, as rarely will it just be matcha. Ours, for example, also has coconut milk powder and green leaf stevia.

 

Onto the Recipe

To make these delicious Matcha Cupcakes, you need: 

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened almond milk (or any other non-dairy milk)
  • 1 tablespoon Jomeis Fine Foods Matcha Powder
  • 1 teaspoon vanilla extract

For the Frosting :

  • 1/2 cup coconut cream (chilled and solidified)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon Jomeis Fine Foods Matcha powder

Instructions:

  1. Preheat Oven: Preheat your oven to (180°C) and line a muffin tin with paper liners or grease it.
  2. Mix Dry Ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, and salt.
  3. Mix Wet Ingredients: In another bowl, whisk together the eggs, melted coconut oil, almond milk, matcha powder, and vanilla extract until well combined.
  4. Combine: Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fill Cupcake Liners: Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  7. Make the Frosting (if using): While the cupcakes cool, make the frosting. Beat the chilled coconut cream with a mixer until it becomes fluffy. Add vanilla extract, and matcha powder to taste, and mix until well combined.
  8. Frost and Serve: Once the cupcakes are completely cool, frost them with the matcha coconut cream frosting if desired.
  9. Enjoy!
